Vegetables Soup - Canh

“Canh” refers to a side soup that is an important component of the traditional Vietnamese dinner table. It is often, but not always, a light and vegetable-forward soup. Different canh can range from very simple with just greens and some pork or shrimp like canh bí (wax gourd) to more complex and hearty ones like canh chua cá (sour fish) or canh khoai mỡ (purple yam). The difference between “canh” and “xúp” (from the French «soupe») is blurry. Anything that comes from a different country, especially in Europe, would definitely be xúp. But for mainly vegetable ones from Vietnam, the distinction usually comes down to whether it is served as an individual appetizer (xúp) or a communal side (canh).

Vietnamese purple yam soup with minced pork

Canh khoai mỡ thịt bằm – It is made from purple yam, commonly known in Vietnamese as khoai mỡ, khoai tím, or khoai tía, amongst other names. This canh can be made with several different types of protein: minced pork, minced fresh shrimp, dried shrimp, or riblets

Vietnamese winter melon soup with shrimp

Canh bí đao tôm - For this soup, we’re using bí đao, also known as bí phấn or bí trắng. In English, it is called winter melon, wax gourd, ash gourd, amongst other names. This gourd is native to South and Southeast Asia. In Vietnam, it’s mainly used in soup, steamed, sautéed, or made into drinks. Supposedly, bí đao has cooling and detoxing properties, making canh bí đao a great soup even for the summer. It has a yet mild, yet distinct flavor, and a natural gentle sweetness.

Vietnamese field crab & malabar spinach soup

Canh cua mồng tơi - The type of green in this soup is called mồng tơi or mùng tơi in Vietnamese, and Malabar spinach, Ceylon spinach or Indian spinach in English. Despite its English names, this plant is not in the same family as the spinach that you know. It has a very distinct but gentle smell and sweet flavor. The texture is slightly slimy like okra, which thickens up the broth. It’s a rich source of vitamins A, C, and B9 along with several minerals.
